Ingredients / Preparation Order:

1 Kg of black beans

3 L of water
________ Select the beans, removing stones, debris, and damaged seeds. Rinse them;
________ Soak the beans in water, overnight until total of 12 hours. Use a large container;
Alert: Soaking Beans is recommended to allow a greater amount of the complex sugars (oligosaccharides) to dissolve, thus helping the beans to be more easily digested, avoiding intestinal gas production.



500 g of sliced bacon
________ Cook the slices of bacon in the microwave, normally, until it gets crispy;
________ Crush into small pieces or grind into powder all the cooked bacon; Reserve it.
Tips_____ Dry out the cooked bacon in a paper towel before grinding into powder.
Alert: Reserve the bacon grease in a small container to use it on this or other recipes and store it inside a refrigerator. But be aware of the amount and usage of this animal fat, don't overload yourself with bacon grease recipes!



________ Start cutting the vegetable/meat listed below:

Alert: Check the size of your pressure cooker before adding optional ingredients, select what and how much you can use.




2 tbsp of olive oil /or other vegetable oil /or a combination with the bacon grease

4 Garlic cloves /or 2 tbsp garlic, minced /or 1 tbsp of garlic powder

2 medium Onions, minced /or 2tbsp of onion powder
1 tsp of dried Green Onion, minced, sprinkled/3 tbsp if fresh (optional)
1 tsp of Salt, powder, sprinkled
1 tsp of Black Pepper, powder, sprinkled
2 tsp of Cornstarch, sprinkled
Alert: Add the cornstarch after the onion gets its water out. Reduce heat and stir well;
________ Add in a pressure cooker, over medium heat:

________ Fry the veggies for 03 minutes and sauté;
________ Add the reserved cooked bacon, minced or ground. Stir well with next ingredients:



½ tsp of cumin, powder, sprinkled
3 large Bay Leaves, whole or powder
________ Add overnight soaked black beans, drained (discard the soaking water/ in plants)
________ Add water to fill up 03 fingers above beans (02 inches above). Stir well;



500 g of dried meat, in small pieces (seasoned beef jerky) (optional)
500 g of smoked beef sausage, in thick pieces (optional)
2 small beets, halved (optional)

________ Pressure cook it all, over medium heat, and when the pressure start up you can count 10 to 15 minutes, according to  your type of pressure cooker .
________ After the cooking time, release all the pressure out before opening the lid;



1 tsp of dried Cilantro, minced or powder, sprinkled /2 tbsp if fresh (optional)
1 tsp of dried Parsley, minced or powder, sprinkled /3 tbsp if fresh (optional)

1 tsp of Paprica, powder, sprinkled
2 tbsp of tomato paste
Tips_____ Try to grind all dried herbs and sprinkled spices in a food processor.
________ Add those last ingredients to the beans in the pressure cooker. Taste and adjust the salt.




Alert: After cooking the beans you can store them in containers, refrigerate and freeze.


PS.: You can get some tablets of Maggi Bacon seasoning to put in black beans instead of doing the seasoning yourself. You can use 02 tablets per liter of water inside the pressure cooker.
